1/2 c. goat cheese, softened

1/2c. cream cheese, softened

1/4c. chopped chives

fresh ground pepper to taste

 

8 flour tortillas

2 roasted red peppers, thinly sliced

kosher salt to taste

Roasted Red Pepper & Goat Cheese Quesadillas

Serves 6-10 as an appetizer.

Or, serve with a crisp, green salad as a light lunch for 4-6.

 

Stir together cheeses, pepper and chives until spreadable consistency. Spread evenly over 4 of the tortillas. Place red pepper strips on top of cheese mixture and sprinkle with a bit of salt, if desired. Top with remaining tortillas and grill or broil until crispy and slightly browned, taking care not to burn. Slice into wedges or strips to serve.
